1.26kg Galloway's all purpose gluten free flour                                                        

156g Flax meal + 600ml Water 

700g Coconut Sugar                                             

30g Baking Soda

12g Pumpkin Pie Spice                                          

9g Baking Powder                                              

15g Sea Salt                                                                  

9g Xanthan Gum                                                

450ml Vegetable Oil                                                                        

500g pumpkin seeds  

3 Cans Pumpkin Puree                                             

 

Directions: 

Blend puree, sugar and oil

Add Flax mixture and mix

Add dry ingredients and pumpkin seeds and mix until combined

Bake at 350 for 30 minutes or when inserted knife comes out clean

 

When baking sprinkle the top of the muffin with additional pumpkin seeds or chocolate chips.
