Organic buckwheat flour is grey in color, has a nutty flavor and is not suitable for bread making. It is used in Japan for noodles, in Russia for blini and in France for crepes, pancakes and waffles. Cookies, scones, and biscuits can be made as well. Buckwheat is naturally gluten free.
