There is evidence of salt gathering as far back as 3000BC. It formed part of wages of Roman troops (hence the word “salary”) and salt tax was a major source of revenue in both India and China. The Portuguese discovered that they could preserve cod for consumption on long sea voyages and it is still used to make gravlax, capers, and anchovies.
