xBeluga lentils are a the of small, black lentil which get their name from the resemblance of Beluga caviar. They are grown in Canada and America’s northern plains. Beluga lentils are paired with other proteins or hearty vegetables and are full bodied and earthy like a black bean. Beluga lentils are high in dietary fiber and folates. Unlike green lentils, black lentils such as Beluga possess anthocyanins – the same powerful antioxidant found in dark berries like blueberries and blackberries. These antioxidants are great at preventing damage to cells by free-radicals
