Amaranth is an ancient, protein packed seed originating in the Mayans. Amaranth seeds can be roasted, popped, boiled and added to other dishes. Amaranth seeds are high in fiber, iron, and calcium. Amaranth is naturally gluten free and can be used as a breakfast cereal by stirring in fruit, nuts or cinnamon. Amaranth can be added used in place of pasta, rice or couscous. Amaranth seeds can be added to stews or soups as a thickener.. Whole grains are best stored in an airtight container in a cool place. They can be stored up to a year in the freezer or 6 months in the pantry. Whole grain flour is best stored in the freezer. If the grains or flour have a rancid smell, it’s best to buy a fresh batch.
