Teff flour is a gluten-free flour made from teff, a tiny, ancient grain native to Ethiopia and Eritrea. Teff is one of the smallest grains in the world, about the size of a poppy seed. It has been a staple in East African diets for thousands of years, particularly in Ethiopia, where it's used to make injera, a traditional flatbread. Teff flour is known for its nutritional benefits, as it is high in fiber, protein, and essential minerals like iron, calcium, and magnesium. It is also a good source of resistant starch, which can help with digestion. Because it's gluten-free, teff flour is often used as an alternative to wheat flour in gluten-free baking, though it can also be used in combination with other flours to create baked goods, pancakes, or porridge.
