Millet is a staple in Africa and parts of Asia as it is a good source of protein. Millet is an excellent source of dietary fiber and is naturally gluten free. Millet can be used in a salad recipe, as a side dish and breakfast porridge. It can be used in casseroles, stews, stuffing and shuffles as well. Whole grains are best stored in an airtight container in a cool place. They can be stored up to a year in the freezer or 6 months in the pantry. Whole grain flour is best stored in the freezer. If the grains or flour have a rancid smell, it’s best to buy a fresh batch.
Use 2 1/2 cups water to 1 cup millet. Bring to boil. Stir once. Lower heat to a low bubble for 45-55 minutes. Keep pot fully covered while cooking.
