Asafoetida is a yellow, pungent powder that is a staple in Indian cooking and most commonly used in vegan or vegetarian recipes. In India it is used as a substitute for garlic, onions, egg and even meat and is used with turmeric in lentil dishes like dal, and a variety of vegetable dishes.
